Thomas-Labaille 'L'Authentique' Sancerre Chavignol Rose, 2025 fortified Pierre Péters's 2017 ‘Les Chétillons’100% Pinot Noir. Thomas Labaille bottles both white and ros Sancerre called L'Authentique. All of the vines are on the Kimmeridgian limestone soils of Chavignol and average twenty five years old; they are sustainably farmed and harvested by hand. The ros is a direct press wine that, like the white, is fermented with native yeasts in fiberglass and cement tanks, aged on its lees in stainless steel tanks for four to six months, does not go through
